Valentine’s Day Monster Cookies

A thick, chewy peanut butter cookie stuffed with oats, M&M’s, and chocolate chips. Make these for your loved ones (or yourself) this Valentine’s Day!

I was introduced to my first monster cookie last Friday. Instantly after I had savored it so delicately I knew that my next mission would be to recreate them. I couldn’t be happier with the result!

These cookies are almost healthy enough to eat for breakfast. I mean, peanut butter and oats are the main ingredients, and those are part of my breakfast every morning! I considered using a banana or applesauce in place of the butter, but what is life without some of the good stuff? A cookie without butter is like Valentine’s Day without chocolate. All about balance, people!

These are man-approved too, by my very own father. It’s a running joke that he should be an amateur food critic. He’s always saying what the dish is missing/shouldn’t have. His only complaint with these was the dark chocolate chips! Who doesn’t like dark chocolate… weirdo. IF you’re crazy like him, you can simply swap for more milk/semi sweet chips.

Without further ado, I bring you Valentine’s Day Monster Cookies!

The perfect treat for Valentine's Day, these monster cookies are loaded with M&M's, chocolate chips, peanut butter, and oats!

Ingredients
  1. 1 cup peanut butter (I used Skippy creamy natural)
  2. 1 cup brown sugar
  3. 1/3 cup white sugar
  4. 6 tbsp butter, softened
  5. 2 eggs
  6. 2 tsp vanilla
  7. 2 1/2 cups quick cooking oats
  8. 1/2 cup old fashioned oats
  9. 1 tsp baking soda
  10. 1/2 cup dark chocolate chips
  11. 1/4 cup milk chocolate chips
  12. 1/2 cup M&M's
Instructions
  1. Preheat oven to 350. Line cookie sheets with parchment paper or spray with non-stick spray.
  2. Using a mixer, cream together the peanut butter, sugars, and butter. Mix in the eggs and vanilla. Add in the oats and baking soda. Finally, add in the chocolate chips and M&M's. Your dough should be THICK!
  3. Form dough into balls and place onto the sheets. Use a cookie scooper, an ice cream scooper, or your hands, depending on how large you want to cookies to be.
  4. Flatten the balls only slightly and top with additional M&M's and chocolate chips.
  5. Bake for 13-15 minutes or until cookies are slightly golden brown. Do not overbake!

    These are so adorable!!!!!!!!!! I love pink! :D And dark chocolate…I agree, I think people who don’t like dark chocolate are crazy. :) Luckily, my family shares my affinity for the dark side. Hehe.
